Tiramisu

2 cups mascarpone cheese, room temperature
1/2 cup powdered sugar
1 cup heavy cream chilled
1 tsp. vanilla extract
1 1/2 cups cooled espresso coffee (the stronger the better)
1/2 cup hazelnut or coffee liqueur or syrup
1 package Italian dry lady fingers ( not the soft spongy kind)
2 cups fresh raspberries (slightly crush with sugar if not very sweet )
1 ounce bittersweet chocolate, grated

In a medium bowl, gently combine the mascarpone cheese with the
sugar until smooth. Whip the cream with the vanilla until soft peak
stage. Fold the whipped cream into the cheese mixture. In a shallow
dish mix the espresso and the liqueur. Dip the lady fingers one at
a time into this very briefly,don't let them get soggy. Layer them
in the bottom of a 7" x 11" serving dish. Spread with half the
cheese mixture. Next spread with the raspberries, Then another
layer of the dipped lady fingers, followed by the rest of the cheese
mix. Sprinkle the top with the grated chocolate, cover tightly with
plastic wrap, and refrigerate at least 4 hours or over night. This
can be made without the berries, sprinkle the layers with coarsely
grated chocolate instead.
