Tiramisu 5 dl hot black coffee about 200 gram lady fingers 7 tablespoons granulated sugar 250 gram mascarpone (Italian cream cheese) 2 eggs, separated 35 ml Amaretto 200-250 gram chocolate shavings Mix the egg yolks together with 3 Tbsp spoons of the sugar till creamy. Add the mascarpone and most of the Amaretto and stir (do not use the electric mixer) till a thick cream.
Beat the egg whites very stiff with 3 Tbsp spoons sugar and fold them carefully in the cream
Dissolve the remaining Tbsp spoon sugar into the coffee and add the rest of the Amaretto to it.
Dip the lady fingers in the coffee and cover the bottom of the glass dish with them (square (20 x 20 cm) or oblong glass dish, with about. 5 cm high sides). Cover this with a layer of the cream and sprinkle thickly with chocolate shavings. Repeat the layer of cream and chocolate shavings.
Leave it for at least 2 hours in the refrigerator, (4 to 6 hours makes it only taste better)
Note: If you don't have chocolate shavings, you can use rough cacao powder (not the sweetened kind for making drinking chocolate). I think it can be bought in Dutch stores). Add this on the cream by using a small sieve.

I made this for Christmas 2003, it is visually inviting and full of rich smoth flavor. My whole family loved it. REMEMBER: if you are not making the lady finger from scratch to buy the soft cake like ones and not the hard cookie like ones- they will not work.
