GRATED FRESH-PEAR SNOW

3 medium pears
2/4 cup fresh lemon juice
1/8 teaspoon salt
6 tablespoons sugar
2 egg whites
Grated unsweetened chocolate (optional)

Grate pears (3 cups) and combine with lemon juice, salt, and 2
tablespoons of the sugar. Beat egg whites until they stand in soft
peaks. Gradually beat in remaining sugar. Fold into pear mixture.
Serve in sherbet glasses. If desired, sprinkle a little grated
unsweetened chocolate over each serving. Makes 6 to 8 servings.
