Mascarpone and Lime Torte

200g pack ginger snap biscuits, crushed
50 g butter, melted
2 250g tubes mascarpone cheese
40g icing sugar
Finely grated zest and juice of 2 limes

Mix biscuits and butter and press into 10cm spring sided or loose
bottomed tin. Place mascarpone, icing sugar, lime zest and juice
in bowl and beat together. Spread over the biscuit base. Decorate
with green seedless sugared grapes and chocolate leaves, if desired.

I am visiting in England where I first tasted this wonderful dessert! I highly recommend it. I helped to make it and it was SO easy to make and absolutely gorgeous when we were done with it!
