Couscous Cake

2 cups apple juice
1 cup water
1 cup couscous
1/2 cup raisins
1/4 cup chopped walnuts
1 tablespoon vanilla
pinch salt

Bring all ingredients to a boil. Reduce heat to simmer (turn off)
and cover. Let stand until all the liquid is absorbed. press into
a baking dish (about a 8x8 ) and allow to cool. Top with fruit.

This is an inexpensive, nutritious, tasty, and flexible recipe allowing for many variations. I use pure apple juice, pecans, nutmeg, shredded coconut, and an additional sweetener. Other variations might include chopped dates, and substitute fruit juices, nuts, and spices.
