Print this Recipe    Country-fried Sponge Cakes

2 Cups Buttermilk Pancake Mix
1 1/2 Cups of Water
1 Tbls Vanilla
6-8 Creme Filled Plain Sponge Cakes
Chocolate Syrup
Powder Sugar

Mix together dry pancake mix, water and vanilla until thick. If a bit more water is needed, add as needed. Batter must be thick, not runny.

Heat oil in deep fryer until desired temperature, about 350 degrees, do not allow to smoke or burn.

With a wooden spoon, roll the sponge cakes in the batter until well coated. Lift out with a 2 prong fork, gently place in the hot oil and allow to fry each side to a golden brown. Drain excess oil on paper towels.

Sprinkle with Powder Sugar or top with Chocolate Syrup and Powder Sugar.
