Caledonian Cream (Scottish)
1 pint curds, crowdie or cottage cheese 2 large tbsps Dundee marmalade 2 tablespoons sugar 2 tablespoons brandy or 2 tablespoons single malt Highland whisky 1 tablespoon lemon juice
Mix all ingredients well. Beat with a whisk. Put in a dish and freeze.
NOTES : This is a dessert which like many Scottish dishes it tastes a great deal better than the ingredients might suggest. The Scots craving for sweet things is a matter of dental record and this dish follows in the steps of an old tradition. You can use your imagination to add additional ingredients, like ground-up gingersnaps, honey, yoghurt, chopped nuts...
