Apple Rhubarb Crunch

1 cup flour
1 1/4 cup rolled oats
1 cup brown sugar
1/2 cup softened margarine
1 1/4 tsp. cinnamon

4 small to medium stalks rhubarb
5 small to medium apples
3 tsp lemon juice

1/2 cup sugar
2 Tbsp cornstarch
1 cup water
1 tsp. vanilla

Peel, core, and slice apples. Sprinkle lemon juice on apples slices. Toss lightly to coat apples with lemon juice. Cut rhubarb into 1/2 inch pieces. Mix with apples.

Mix flour, rolled oats, brown sugar, margarine and cinnamon until
crumbly. Press half of this mixture into a 9" greased glass baking dish. Cover with apple rhubarb mixture.

Combine sugar, cornstarch, and water. Cook until thick and clear in a small saucepan. Remove from heat and add vanilla. Pour over apple rhubarb.

Top with remaining crumbs. Bake at 350 degrees for 1 hour. Cool at least 1 hour on cooling rack.

Tips: Place cookie sheet on lower oven rack to catch any dripping.
Baking dish will be full or slightly over-filled prior to
cooking. Mixture will shrink some upon cooling.
